Preheat your oven to 350°F (180°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In another bowl, beat the eggs and then add the honey, oil, and vanilla extract. Mix well until combined.
Slowly add the wet mixture to the dry ingredients, mixing gently until just combined. Then add the hot coffee (or tea) and stir until smooth.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
