Ingredients
  

  • 1 cup honey use a light, floral honey for best results
  • 3 cups all-purpose flour sifted
  • 1 cup sugar white granulated
  • 1 cup vegetable oil can substitute with melted butter
  • 4 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon ground
  • 1/2 teaspoon salt
  • 1 cup hot coffee or strong tea

Instructions
 

  • Preheat your oven to 350°F (180°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, beat the eggs and then add the honey, oil, and vanilla extract. Mix well until combined.
  • Slowly add the wet mixture to the dry ingredients, mixing gently until just combined. Then add the hot coffee (or tea) and stir until smooth.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
