Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, mix together the flour and salt.
Add the olive oil and water to the flour mixture and stir until a dough forms. Add more water if the dough is too dry.
On a floured surface, roll out the dough until it is very thin, around 1/8 inch thick.
Cut the dough into desired shapes and place them onto the prepared baking sheet.
Sprinkle sesame seeds on top, if using, and lightly press them into the dough.
Bake for 12-15 minutes, until the crackers are golden and crispy.
Allow to cool on a wire rack before serving.
