Ingredients
  

  • 200 grams green beans trimmed and cut into 2-inch pieces
  • 50 grams feta cheese crumbled
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

  • Bring a pot of water to boil, add a pinch of salt, and blanch the green beans for about 3-4 minutes until tender-crisp.
  • Drain the green beans and immediately rinse under cold water to stop the cooking process.
  • In a large bowl, combine the blanched green beans, crumbled feta cheese, olive oil, lemon juice, salt, and black pepper.
  • Toss everything together until the beans are well coated with the dressing.
  • Serve the salad chilled or at room temperature.
