Instructions
In a medium bowl, mix crushed gingerbread cookies with softened cream cheese until fully combined and forms a dough.
Form small balls from the dough and place them on a baking sheet lined with parchment paper.
Melt white chocolate in a microwave or double boiler, stirring frequently until smooth.
Dip each gingerbread ball into the melted chocolate, making sure each is thoroughly coated. Place back on the parchment paper.
Sprinkle with additional crushed gingerbread or a dusting of ground ginger and cinnamon, if desired.
Refrigerate for at least 1 hour before serving to allow the truffles to set.
