Delicious, bite-sized gingerbread truffles that are perfect for the holidays or any time you crave a festive treat.

Ingredients
  

  • 1 1/2 cups gingerbread cookies finely crushed
  • 4 oz cream cheese softened
  • 8 oz white chocolate melted
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon

Instructions
 

  • In a medium bowl, mix crushed gingerbread cookies with softened cream cheese until fully combined and forms a dough.
  • Form small balls from the dough and place them on a baking sheet lined with parchment paper.
  • Melt white chocolate in a microwave or double boiler, stirring frequently until smooth.
  • Dip each gingerbread ball into the melted chocolate, making sure each is thoroughly coated. Place back on the parchment paper.
  • Sprinkle with additional crushed gingerbread or a dusting of ground ginger and cinnamon, if desired.
  • Refrigerate for at least 1 hour before serving to allow the truffles to set.
