Preheat your oven to 400°F (200°C).
In a large bowl, combine olive oil, garlic powder, salt, pepper, and Italian seasoning.
Add potato wedges to the bowl and toss well to coat evenly.
Place the potato wedges in a single layer on a baking sheet lined with parchment paper.
Sprinkle the Parmesan cheese over the top of the potato wedges.
Bake in the preheated oven for about 30-40 minutes, turning them halfway, until golden brown and crispy.
Garnish with freshly chopped parsley before serving.
