Fried Polenta is a delicious Italian dish made from cornmeal, perfect as a side or appetizer. The outside is crispy, while the inside remains soft and creamy.

Ingredients
  

  • 1 cup polenta instant or regular cornmeal variety
  • 4 cups water for cooking the polenta
  • 1 teaspoon salt to taste
  • 2 tablespoons butter for flavor
  • 1 cup grated Parmesan cheese optional, for extra flavor
  • 2 tablespoons olive oil for frying

Instructions
 

  • In a large saucepan, bring water and salt to a boil.
  • Gradually whisk in the polenta, reducing heat to low and stirring constantly until thickened, about 15-20 minutes.
  • Stir in butter and cheese (if using) until fully combined, then pour the polenta onto a greased baking sheet or dish to cool and set.
  • Once set, cut the polenta into desired shapes or squares.
  • Heat olive oil in a skillet over medium heat and fry the polenta pieces until golden brown and crispy on each side.
  • Serve warm as a side dish or appetizer.
