Ingredients
  

  • 1 piece filet mignon about 6-8 oz, trimmed
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • 2 tablespoons unsalted butter softened
  • 1 ounce blue cheese crumbled
  • 1 teaspoon fresh parsley chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Season the filet mignon with salt and black pepper.
  • Heat the olive oil in a skillet over medium-high heat.
  • Sear the filet mignon for about 2-3 minutes on each side until browned.
  • Transfer the skillet to the preheated oven and cook for 5-7 minutes for medium-rare.
  • While the steak is in the oven, mix the softened butter, blue cheese, and parsley in a bowl.
  • Remove the steak from the oven and let it rest for 5 minutes.
  • Top the steak with the blue cheese butter before serving.
