blue cheese

Instructions
Preheat your oven to 400°F (200°C).
Season the filet mignon with salt and black pepper.
Heat the olive oil in a skillet over medium-high heat.
Sear the filet mignon for about 2-3 minutes on each side until browned.
Transfer the skillet to the preheated oven and cook for 5-7 minutes for medium-rare.
While the steak is in the oven, mix the softened butter, blue cheese, and parsley in a bowl.
Remove the steak from the oven and let it rest for 5 minutes.
Top the steak with the blue cheese butter before serving.
