A healthy and delicious snack made with figs, dates, and nuts.

Ingredients
  

  • 1 cup dried figs
  • 1 cup pitted dates
  • 1 cup Nuts almonds, cashews, walnuts), e.g.
  • 2 tbsp honey
  • 2 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • shredded coconut Optional topping

Instructions
 

  • Place the dried figs, pitted dates, nuts, honey, chia seeds, and vanilla extract in a food processor or blender.
  • Pulse or blend on high until the ingredients are well combined and the mixture becomes sticky and holds together when pressed.
  • Scoop out tablespoon-sized portions of the mixture and roll into balls using your hands.
  • If desired, roll the energy balls in shredded coconut, cocoa powder, or chopped nuts to coat.
  • Place the energy balls in an airtight container and refrigerate for at least 1 hour before serving.
  • Enjoy as a healthy and delicious snack!
