Ingredients
  

  • 1 tablespoon olive oil for sautéing
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 medium bell peppers any color, diced
  • 1 medium zucchini diced
  • 1 large can crushed tomatoes 28-ounce can
  • 2 cans black beans rinsed and drained
  • 2 tablespoons chili powder to taste
  • 1 teaspoon ground cumin for flavor
  • to taste salt and pepper seasoning

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  • Stir in the diced bell peppers and zucchini, cooking for 3-4 minutes until they start to soften.
  • Pour in the crushed tomatoes, black beans, chili powder, and ground cumin. Stir to combine.
  • Season with salt and pepper to taste.
  • Reduce heat to low and let simmer for 20 minutes, stirring occasionally.
  • Serve hot and enjoy!
