Ingredients
  

  • 2 whole artichokes Select fresh and large
  • 2 tablespoons olive oil Extra virgin for best flavor
  • 1 teaspoon salt Add more to taste if desired
  • 1 teaspoon black pepper Freshly ground is best
  • 1 tablespoon lemon juice Freshly squeezed if possible

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Trim the top inch of each artichoke and remove small leaves at the base.
  • Cut the artichokes in half and remove the fuzzy choke part in the center.
  • Place the artichokes in a baking dish cut side up.
  • Drizzle them with olive oil, then sprinkle with salt, pepper, and lemon juice.
  • Cover the dish with foil and bake for 40 minutes or until tender.
  • Serve the artichokes warm with additional lemon wedges, if desired.
