Instructions
Preheat your oven to 400°F (200°C).
Trim the top inch of each artichoke and remove small leaves at the base.
Cut the artichokes in half and remove the fuzzy choke part in the center.
Place the artichokes in a baking dish cut side up.
Drizzle them with olive oil, then sprinkle with salt, pepper, and lemon juice.
Cover the dish with foil and bake for 40 minutes or until tender.
Serve the artichokes warm with additional lemon wedges, if desired.
