Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a shallow dish, place the flour. In a second shallow dish, place the beaten eggs. In a third shallow dish, combine the crushed cornflakes, salt, pepper, garlic powder, and paprika.
Dredge each piece of chicken first in the flour, then dip in the beaten eggs, and finally coat thoroughly with the cornflake mixture.
Place the coated chicken pieces on the prepared baking sheet.
Bake in the preheated oven for 30 minutes or until the chicken is cooked through and the coating is crispy and golden brown.
Remove from the oven and let rest for 5 minutes before serving.
