Ingredients
  

  • 2 pieces chicken breast
  • 1 cup cranberries fresh or frozen
  • 1/2 cup orange juice freshly squeezed
  • 1/4 cup honey
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon orange zest finely grated
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a small saucepan over medium heat, combine cranberries, orange juice, honey, soy sauce, and orange zest. Cook until cranberries burst and mixture thickens, about 10 minutes. Stir occasionally.
  • Season the chicken breasts with salt and pepper on both sides.
  • In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear until golden brown, about 3-4 minutes each side.
  • Pour the cranberry-orange glaze over the chicken breasts.
  • Transfer the skillet to the preheated oven and continue cooking for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove from oven and let rest for 5 minutes before serving.
