Instructions
In a large bowl, combine the chickpeas, red bell pepper, cucumber, red onion, cherry tomatoes, parsley, and mint.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve chilled and enjoy!
