Ingredients
  

  • 1 cup hummus store-bought or homemade
  • 1/2 cup canned chickpeas drained and rinsed
  • 1 cup mixed greens such as spinach or arugula
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup cucumber sliced
  • 2 tbsp feta cheese crumbled
  • 1 tbsp olive oil extra virgin
  • 1 tsp lemon juice freshly squeezed
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • In a bowl, spread the hummus at the bottom to create a bed.
  • Arrange the mixed greens, chickpeas, cherry tomatoes, and cucumber over the hummus.
  • Sprinkle crumbled feta cheese on top.
  • Drizzle olive oil and lemon juice over the assembled bowl.
