A delightful twist on the traditional cherry pie, these Cherry Pie Cookie Bars are an easy way to enjoy a classic dessert in a portable form.

Ingredients
  

  • 1 cup unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can cherry pie filling (21 ounces)

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease or line a 9x13 inch baking pan with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract and eggs until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Spread 2/3 of the dough evenly into the prepared baking pan. Spread cherry pie filling over the dough.
  • Drop the remaining dough by spoonfuls over the cherry filling, gently pressing to flatten.
  • Bake in the preheated oven for 35 minutes or until the top is golden brown and the edges are set.
  • Allow the bars to cool completely before cutting into squares. Serve and enjoy!
