Ingredients
  

  • 2 stalks celery sliced thinly
  • 1 whole green apple chopped
  • 0.25 cup walnuts chopped and toasted
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • In a mixing bowl, combine the sliced celery, chopped green apple, and toasted walnuts.
  • In a small bowl, whisk together olive oil and lemon juice.
  • Pour the dressing over the salad and toss to combine.
  • Season with salt and freshly ground black pepper to taste.
  • Serve immediately or chill for 10-15 minutes for the flavors to meld. Garnish with parsley.
