Ingredients
  

  • 1 head broccoli cut into florets
  • 2 cups cheddar cheese shredded
  • 1 cup milk whole or 2%
  • 2 cups chicken broth
  • 1 medium onion diced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon nutmeg optional
  • to taste salt and pepper

Instructions
 

  • Melt the butter in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  • Stir in the flour and cook for another minute, then gradually whisk in the chicken broth until smooth. Bring the mixture to a simmer.
  • Add the broccoli florets and cook until tender, about 10 minutes.
  • Stir in the milk and cheese until the cheese is melted and the soup is creamy. Season with nutmeg, salt, and pepper to taste.
  • If desired, puree part of the soup with an immersion blender for a smoother texture.
  • Serve hot and enjoy!
