Ingredients
  

  • 1 cup mashed ripe bananas about 2 large bananas
  • 1/2 cup sugar
  • 1/3 cup butter melted
  • 1 egg beaten
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix the mashed bananas, sugar, melted butter, and beaten egg until well combined.
  • Stir in the baking soda and salt. Add the flour and mix until just incorporated.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
