Instructions
Preheat the oven to 180°C (350°F).
Lay a sheet of phyllo dough on a clean work surface and brush with melted butter. Place another sheet of phyllo on top and brush with butter again.
Cut the layered sheets into squares and place a teaspoon of crumbled feta in the center of each square.
Fold the phyllo over the cheese to create small parcels and place on a baking sheet lined with parchment paper.
Repeat with the remaining phyllo sheets and feta.
Bake for 20-25 minutes or until golden and crispy.
Remove from oven and drizzle with honey and fresh thyme before serving, if desired.
