Artichoke Linguine is a delicious and simple pasta dish that combines the rich flavors of artichokes with the freshness of lemon and herbs, perfect for a quick and satisfying weeknight dinner.

Ingredients
  

  • 12 ounces linguine pasta uncooked
  • 2 tablespoons olive oil extra virgin
  • 3 cloves garlic minced
  • 1 can artichoke hearts drained and quartered
  • 1/4 cup lemon juice freshly squeezed
  • 1/4 cup parmesan cheese grated
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions
 

  • Cook the linguine according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the artichoke hearts to the skillet and sauté for another 3-4 minutes.
  • Stir in the lemon juice, cooked linguine, parmesan cheese, and fresh parsley. Toss to combine and heat through.
  • Season with salt and black pepper to taste. Serve immediately.
