Ingredients
  

  • 1 cup walnuts halved
  • 1/4 cup sugar for candying walnuts
  • 2 apples cored and thinly sliced
  • 1/2 cup dried cranberries
  • 4 cups mixed salad greens such as arugula, spinach, and lettuce
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions
 

  • In a small skillet, combine walnuts and sugar over medium heat. Stir constantly until the sugar melts and coats the walnuts. Remove from heat and spread the walnuts on parchment paper to cool.
  • In a large bowl, combine the salad greens, apples, candied walnuts, cranberries, and feta cheese.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
