Sunshine-Infused Orange Cranberry Biscotti

At #4, the chocolate coating of the previous recipe gives way to dried cranberries mixed into an orange-scented dough. Fresh orange zest supplies the citrus aroma, while the cranberries add chewy, tart bites to the crisp cookie. Choose this version if you prefer fruit throughout your biscotti to a chocolate finish.
Servings 12 people
Prep Time 15 minutes
Cook Time 43 minutes
Total Time 1 hour

Ingredients

  • 2 cups All-purpose flour (spooned and leveled)
  • 3/4 cup Granulated sugar
  • 1 tsp Baking powder (gives the dough its necessary lift)
  • 1/4 tsp Salt (balances the sweet and tart notes)
  • 1.5 tbsp Fresh orange zest (from about 1 large or 2 medium oranges—do not skip this, it is the soul of the recipe!)
  • 3 large Eggs (room temperature)
  • 1 tbsp Fresh orange juice (adds a tiny pop of extra acidity)
  • 1 tsp Vanilla extract (adds a warm background flavor)
  • 1 cup Dried cranberries (adds that signature chewy, tart contrast)

Instructions

  • Preheat your oven to 350°F (175°C). Line a large baking sheet with a piece of parchment paper and set it aside.
  • In a small bowl, combine the granulated sugar and fresh orange zest. Use your fingertips to rub the zest into the sugar for about a minute. The sugar will become beautifully fragrant, slightly moist, and take on a pale orange tint—this maximizes the citrus flavor!
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and the orange-infused sugar.
  • In a separate bowl, lightly beat the eggs, then whisk in the fresh orange juice and vanilla extract.
  • Pour the wet ingredients into the dry flour mixture. Use a wooden spoon to mix until a dense, slightly sticky dough begins to come together.
  • Fold in the dried cranberries, using your hands to gently knead the dough if necessary so the fruit is evenly dispersed.
  • Turn the dough out onto a floured surface. Divide it into two equal halves. Shape each half into a log measuring roughly 9 inches long by 2.5 inches wide. Place them on the prepared baking sheet, leaving room for them to expand.
  • Bake for 25 minutes until the logs feel firm to the touch and are lightly golden. Remove from the oven and let them cool on the pan for 10 to 15 minutes. Reduce your oven temperature to 325°F (165°C).
  • Transfer the cooled logs to a cutting board. Using a sharp serrated knife, gently saw them on a diagonal into 3/4-inch thick slices.
  • Place the biscotti slices cut-side down on the baking sheet. Bake for 8-10 minutes, flip them over, and bake for a final 8-10 minutes until lightly toasted and completely dry. Cool on a wire rack before storing in an airtight container!

Rub the orange zest into the sugar before combining it with the other dry ingredients. This distributes the citrus oils throughout the dough.

Watch the slices during the second bake, as overbaking can make the cranberries tough. Use a sharp serrated knife and a gentle sawing motion when slicing the logs to avoid pulling the fruit out.

Next: Rustic Double-Toasted Hazelnut Biscotti. The countdown moves from orange and cranberries to toasted hazelnut flavor.

Biscotti tastes great but the steps are a bit confusing. What does it mean to ‘knead gently?’

    1. User avatar valentin.zieme says:

      5 stars
Knead gently means to mix the dough carefully with your hands, just enough to combine everything without overworking it. It should stay light fluffy! Hope that helps!

  19. 2 stars
I tried this but it turned out too dry. Maybe I overbaked? Not sure if I will make it again.

Hard to believe people actually eat this. Biscotti is just fancy hard bread, right?

  26. User avatar rickiestmorty says:

    3 stars
Biscotti is just a fancy name for cookies, right? These tasted like regular cookies but my mom loves them. 🤷‍♂️

    1. 3 stars
Nah, not quite the same. Cookies are soft, biscotti are supposed to be hard and crunchy! But if your mom likes them, that’s what matters. 👍

    2. User avatar jarred.ernser59 says:

      4 stars
Biscotti has its own unique texture though! They are drier and meant to be dunked in coffee or tea. Your mom has good taste! 🍵

    2. User avatar Cris Swaniawski says:

      3 stars
Sounds tasty, but won’t the coffee make it soggy? I like mine crunchy! 🤔

  33. User avatar daniela.thompson says:

    2 stars
Mine came out kinda tough, like break-your-teeth biscotti. I maybe overbaked the first time at 25 minutes because my timer was off… but instructions are clear so it’s on me I guess.

  34. 3 stars
I think it needed more vanilla—like 2 tsp? The orange was strong, but the base flavor felt a little flat to me. Also I forgot to rub zest into sugar at first (oops).

  35. User avatar kendrick.connelly78 says:

    2 stars
I don’t understand why everyone loves this recipe. It didn’t come out like the picture. Maybe I did something wrong? 🤔

    1. User avatar otha.hudson51 says:

      5 stars
I think the picture’s just there to tease us! Sometimes it just doesn’t look the same, but taste is what matters! Just enjoy what you made. 😋

    2. User avatar geoWizard says:

      4 stars
Don’t worry! Not every recipe turns out perfect the first time. I’ve messed up biscotti too. Maybe the dough was too wet? Or did you mix enough? Keep trying! 😊

  36. User avatar liliana.schulist1974 says:

    3 stars
I think the recipe is missing something—like how thick to press the logs consistently. My slices came out too thin and dried too much. Flavor is great, texture not so much.

  37. User avatar Dro'marash says:

    4 stars
Really easy to follow recipe! I didn’t have cranberries, so I used raisins instead and it worked fine. Yum!

  38. User avatar jaimie.powlowski36 says:

Tried this recipe and totally failed. The dough was too sticky and I ended up with mush. Not for me. 😩

  39. User avatar jenell.upton75 says:

    2 stars
Eh, they turned out too dry for my taste. And who needs orange zest? Just sugar will do.

    1. User avatar Septimus says:

      4 stars
I actually loved the orange zest! It adds a unique flavor. Sorry yours didn’t work out.

  40. User avatar Bowerick Wowbagger says:

    3 stars
I accidentally used orange extract instead of zest (oops). It still tasted good though—like creamsicle-ish. Might be my fault it wasn’t as bright as I wanted.

  41. User avatar tommye.green31 says:

    3 stars
I thought biscotti was supposed to be hard. These feel like cookie bread, I guess it’s not what I expected. 🤷‍♂️

  42. User avatar anglea.hoeger90 says:

    5 stars
My family devoured them before they even cooled all the way. The diagonal slices thing is genius. Tiny bit time-consuming but worth it.

  43. 4 stars
Crunchy outside, chewy inside—love it. But the timing was tricky for me. I ended up doing closer to 12 minutes each side the second bake to get them “completely dry.”

  44. User avatar laticia.schneider2009 says:

    2 stars
This recipe is cute and smells like sunshine, but I got no lift. The logs stayed kinda pale and thick. Maybe my baking powder is old? Either way, tastes good with coffee.

  45. User avatar lucky777 says:

    3 stars
Sunshine flavor? More like lemon with a hint of orange. I say add more zest! 🍊

  46. User avatar jeniffer.funk2008 says:

    3 stars
I followed it exactly (even the oven temp drop), but mine came out a bit dense. Maybe my eggs were cold? Flavor is good though—just not super crisp.

  47. User avatar rosetta.brown1953 says:

    2 stars
Citrus biscotti are overrated. I made these expecting wow and got mostly eggs and flour. Cranberries help, but I probably won’t make again.

    1. User avatar aja.oconner25 says:

      5 stars
I actually had the opposite experience—these came out super fragrant. Cranberries help, but I think the key is using a LOT of zest and not rushing the first mix. Also, letting them cool fully makes a difference.

    2. 3 stars
Sorry it didn’t hit for you—biscotti can be a little more “dense and dry” than people expect. Eggs + flour is kind of the whole vibe, but the orange zest is usually what saves it for me. Did you zap the zest into the sugar like the instructions say?

  48. User avatar Dr. Dave DuBuque says:

    5 stars
These are amazing! I’m eating one straight from the rack, like, right now. 10/10 would make again.

  49. User avatar Ardelia Little says:

    5 stars
These smell incredible—orange zest in sugar is such a smart step. Mine turned out slightly darker, but still super crunchy and the cranberries are perfectly chewy.

  50. User avatar Torchbugs says:

    5 stars
The instructions are super clear and the texture instructions help a lot. I chilled the dough for 20 min before shaping and that made slicing way easier. Great recipe!

  51. User avatar terminatorXYZ says:

    3 stars
I used dried orange zest powder once instead of fresh (didn’t read closely enough). Big difference—less fragrant and kinda flat. So yes, fresh zest is the soul like the recipe says. Would definitely redo properly.

  52. User avatar Manual Ankunding says:

    2 stars
I love orange anything, but these were way too eggy for my taste. Also, my orange zest didn’t blend as nicely into the sugar—maybe my oranges were drier.

  53. User avatar junior.gerlach says:

    4 stars
I followed it pretty closely, but my dough felt way too sticky at step 4. I ended up adding a tiny bit more flour and it worked. Tastes like holiday bakery biscotti.

  54. User avatar Ice Wraith says:

    3 stars
I’m not sure about 1.5 tbsp zest being “the soul.” Mine was honestly subtle. Next time I might add a little more zest or orange extract.

  55. User avatar vernell.orn says:

    5 stars
Wow, the orange-sugar step makes the whole kitchen smell amazing. I’m not usually a baking person, but this was pretty straightforward. 10/10 with coffee.

  56. 3 stars
Not bad, but I think 25 minutes on the first bake is too long? My logs got a little over-browned and were harder to slice cleanly. Still tasty, just messier slices.

  57. User avatar terminatorXYZ says:

    5 stars
These smell incredible—like orange soda but fancy. I followed the zest-sugar step exactly and the biscotti actually tastes brighter than the last batch I tried.

  58. User avatar rene.emmerich1965 says:

    5 stars
Made these last weekend and wow—the orange zest really does smell like sunshine. Crispy outside, chewy cranberries in the middle. I baked a couple minutes longer just to get them extra dry like biscotti should be.

    1. User avatar shayne.kessler says:

      5 stars
“Sunshine” is exactly right 😂 I love when the zest actually shows up like that. Going to try your extra bake for more crunch!

  59. 4 stars
Quick question: the oven temp drop is confusing—does it really need to go from 350 to 325 after cooling 10-15 minutes? I did it anyway and they turned out okay. Would make again.

  60. 5 stars
Biscotti is supposed to be hard-ish, so when I saw “firm to the touch” I panicked. But after the second bake they turned out perfectly crunchy. Nice instructions!

  61. 2 stars
I measured the flour by scooping (oops) and mine spread a bit more than expected. Flavor still great, but the logs weren’t as neat. Use the spoon-and-level like it says.

    1. User avatar corey.welch23 says:

      5 stars
Yes! Spoon-and-level is *so* important for biscotti. I’ve done the “scoop” thing before too—everything ends up a little wider/spreadier. Your correction will help a ton next batch!

    2. User avatar basementDweller says:

      4 stars
Mine did the same when I wasn’t paying attention to the flour. The flavor wins every time, but the look gets scrappy 😂 Thanks for the heads-up!

  62. 4 stars
I accidentally used orange juice straight from the bottle (oops) and it still tasted good. Also I think I overbaked by like 2 minutes—my biscotti is a bit crunchy-crunchy but still edible.

  63. User avatar Shaddam Corrino IV says:

    5 stars
Not gonna lie, I was skeptical about rubbing zest into sugar for a whole minute… but wow, that actually made my kitchen smell amazing. 10/10 for aroma alone.

  64. 2 stars
Biscotti came out too hard for my taste. Like, I can’t bite without feeling like I’m chewing a cookie brick. Flavor still good, but next time I’ll shorten the final bake.

  65. User avatar shalonda.kuvalis says:

    4 stars
Not gonna lie, 25 min + two rounds of baking feels like a lot. I was worried they’d be underdone, but after cooling they actually snapped nicely. Next time I’ll slice them a bit thinner for extra crunch.

  66. User avatar liberal.hero says:

    4 stars
    Short and sweet: so good.

    1. 5 stars
Right?? The orange zest really does make them taste like sunshine.

  67. 4 stars
Good biscotti base recipe, but I found the dough super sticky. I ended up adding a little extra flour on the surface while shaping—works fine if you don’t overdo it.

  68. 4 stars
Took a little longer than expected to get them “completely dry,” but once I did the second bake they were crisp and not too sweet. Great flavor combo!

  69. User avatar Samwise Gamgee says:

    4 stars
Super tasty, though mine came out a bit too soft after the first bake. I think I underbaked by a couple minutes. Still, the cranberry-chewy factor is on point.

  70. 2 stars
Mine came out kinda dry and crumbly, like cookies not biscotti. I think I overbaked the second round. Cranberries were good, orange was a little faint. Next time I’ll use more zest.

    1. User avatar joe_banana says:

      4 stars
Ahh that dry/crumbly “cookie” texture totally makes sense if the second bake went a bit too long. Biscotti usually stays on the dryer side, but it should still feel more crisp than crumbly. I’ve found 16–18 min total for the second round (flipping halfway) is the sweet spot—also letting them cool fully really helps.

    2. User avatar inell.kilback26 says:

      4 stars
Try cutting the logs a little thicker (like 1 inch). Mine get too dry if I slice thinner. Also, did you bake until they’re “completely dry” like the recipe says? Because once they look toasted, they can go fast 😅

  71. User avatar lizzzard says:

    4 stars
Good flavor, but mine spread a bit and the logs weren’t as “firm” at 25 minutes. I ended up baking a couple extra minutes. Still tasty though—cranberries are perfect.

  72. User avatar bertram.dicki61 says:

    4 stars
I did not rub the zest in long enough (like 10 seconds, oops). Flavor still came through but not as “sunshine infused.” Lesson learned.

  73. User avatar Sand-Dial says:

    2 stars
Ok real talk: I didn’t have fresh oranges so I used bottled orange juice and orange extract. It tasted kinda like orange-flavored candy instead of real citrus. Still edible, but… not the same.

  74. User avatar williams.rempel11 says:

    5 stars
Followed the instructions exactly and the logs were easy to shape. Just make sure you rub the zest into the sugar—step 1 is not optional, it really does make the flavor pop.

  75. User avatar jordon.feest14 says:

    2 stars
Honestly I think 1.5 tbsp zest is too much. It kinda overwhelmed the cranberries for me. I’d cut it in half next time. Texture was okay though.

  76. User avatar cristopher.bahringer35 says:

    4 stars
350°F… then reduce to 325°F… and then flip and bake again. Kinda a lot of steps. But it worked. I ate one before it was fully dry and it was still good!

  77. User avatar Dro'marash says:

    3 stars
Okay but why do they say to cool 10-15 minutes then lower temp—my brain short-circuited. I still did it and they turned out tasty. Not perfect, but my coworkers ate them all.

  78. User avatar Corrupted Shade says:

    1 star
meh… too much work for cookies that last forever. I prefer soft cookies tbh.

  79. User avatar fletcher.johnston48 says:

    4 stars
I followed it mostly but my dough was way too sticky—had to add a bit more flour. Still tasty though. Also, step 7 says reduce temp after cooling a bit; I think that timing matters a lot.

  80. User avatar Hillman Hunter says:

    5 stars
These are amazing with coffee. My whole family asked for seconds and nobody even complained about “biscotti being dry.” They’re dry-ish but in the good crunchy way.

    1. User avatar nella.koelpin says:

      5 stars
Yes!! “Good crunchy” is exactly it 😄 I love these with coffee too. The orange zest/sugar step really makes a difference.

  81. User avatar collin.sipes2011 says:

    3 stars
The instructions say reduce temp after cooling 10-15 min, but I kinda missed that step. They still came out okay, just more toasted than I expected. Still 100% would eat again.

  82. 3 stars
Pretty good texture, but I wish it had more orange juice flavor. The zest is there, but the juice feels subtle. Could add a tiny bit more juice or even some orange extract.

  83. User avatar sigrid.swift67 says:

    4 stars
My biscotti came out a little too brown on the edges (maybe my oven runs hot). Still delicious though—next time I’ll check closer to the 8-minute mark and rotate the tray.

  84. 3 stars
I’m confused by the oven-temp change. First 350°F then reduce to 325°F after cooling on the pan? That part doesn’t make sense to me, so I ended up doing everything at 325°F and they were fine, just maybe not as crisp.

  85. User avatar judith.schamberger92 says:

    2 stars
Too sweet for me (I know cranberries are tart but still). Might reduce sugar next time. Also my edges burned a little even though I watched it closely.

    1. User avatar sommer.weimann says:

      3 stars
Mine burned too even tho I watched it 😩 I think my oven runs fast. I’ll try 325 sooner? Also I used kinda heaping sugar by accident, so maybe that’s why it tasted too sweet.

    2. User avatar loreta.will says:

      4 stars
I get what you mean—cranberries can still read “sweet” depending on how they bake. Next time try reducing sugar a bit or using less cranberries (or chopped smaller so they distribute more tartly). Also edge burning could be your oven running hot—did you check the temp with an oven thermometer?

  86. 3 stars
I like the idea, but 1 cup cranberries felt like it might be too much for the dough. Mine were a bit uneven and some slices had more fruit than others.

  87. User avatar antonio.hickle says:

    4 stars
Not gonna lie, I was skeptical about 1.5 tbsp zest being “the soul,” but wow—there’s a bright citrus punch. Mine came out a bit thicker than 9 inches but still tasty.

  88. User avatar daphine.rippin says:

    5 stars
Made these for a holiday bake sale and they disappeared fast. The orange zest + sugar step is legit—my kitchen smelled amazing. I do wish I had one more batch of cranberries though 😅

  89. 2 stars
The instructions say ‘reduce oven temperature’ mid-way—mine got a little confusing and I nearly forgot to lower it. I ended up cooking them a few minutes longer. Still edible though, just darker than I wanted.

  90. User avatar casandra.macejkovic43 says:

    5 stars
These are dangerously good. The orange zest really does come through—like bright and “sunny” without being too sweet. I made mine a tiny bit thicker and they still turned out crisp. Will bake again for holidays!

  91. User avatar herlinda.dickinson64 says:

    3 stars
    Looks yummy!

Made these this morning and the orange smell alone is worth it. The cranberry chew is perfect—crunchy but not rock-hard. I baked mine 10+10 minutes for extra crisp and they turned out great.

These are dangerously good. The orange zest + cranberries combo tastes like a fancy café cookie but homemade. I got a perfect crisp snap after the second bake.

Followed the recipe pretty much exactly. My logs spread a little more than expected, but the second bake got them nice and dry. Cranberries are chewy and tart in a good way.

That sounds so good. I always worry biscotti will end up too soft, so “dry on the second bake” gives me hope. 🍊🫐

Not bad! The dough was a little sticky, but I expected that with biscotti. Mine took closer to 12 minutes on the second bake to get truly dry, so watch them. Cranberries are the MVP.

Wait… you baked the second round 12 minutes, not 8-10? I might try that. Mine came out a little too soft and I thought my oven runs hot. Cranberries MVP for sure though—those tart bites are addictive.

Yes! The sticky dough part worried me too, but it makes sense with biscotti. Thanks for the timing heads-up—12 minutes on the second bake is super helpful. And agreed, cranberries really steal the show.

Not to be that person but 9 inches by 2.5 inches? Mine spread and ended up more like 10×3. I guess ovens vary. Taste was great though, so I’m not mad.

I followed it, but my logs spread too much and the slices ended up uneven. Maybe my oven runs hot or my eggs weren’t fully room temp. Still ate them—just more “crunchy cookies” than biscotti.

I tried it with less sugar (like 1/2 cup) because I’m watching carbs. The dough was harder to shape and the biscotti tasted more tart than sweet. Next time I’ll follow the sugar.

Good call on trying it with less sugar—biscotti really does depend on that sweetness balance. When you reduced it, the citrus/cranberry probably really took over, so tart makes sense. Next time maybe try 2/3 cup instead of 1/2 if you want to keep some shape and sweetness!

Not gonna lie, 1.5 tbsp orange zest sounds like a lot to me. I used less and it still tasted orange-y, so maybe you can scale. Still good, but I wouldn’t call it “soul of the recipe” lol.

Hmm interesting. I used closer to 2 tbsp and it was orange overload for me 😅 Next time I’ll try your “scale it” approach.

I totally agree—1.5 tbsp zest felt like a lot at first. I did it anyway and it’s super fragrant, but I could definitely see scaling down if someone doesn’t want it super punchy.

I followed it but my logs spread a bit and came out flatter. Flavor is great though—tangy orange + sweet works. Next time I’ll chill the dough before shaping.

Interesting—mine never spread that much if I let the dough rest 10-15 min after mixing. Also did you weigh the flour? Spoon & level can still vary a lot.

Thanks for the honest feedback! Flat logs usually happen when the dough is a bit loose—chilling definitely helps it firm up before shaping. Glad the flavor still hit though 🍊
