Instructions
Preheat the oven to 425°F (220°C).
In a bowl, beat the eggs until frothy, then gradually add the flour, salt, and milk to create a smooth batter. Let the batter rest for 10 minutes.
Put about 1/2 teaspoon of beef drippings or vegetable oil in each cup of a muffin tin and place the tin in the oven to heat until the oil is very hot.
Quickly pour the batter into the hot muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 20-25 minutes until the puddings are puffed and golden brown.
