Ingredients
  

  • 2 tablespoons olive oil extra virgin
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups vegetable broth low sodium
  • 2 cans white beans drained and rinsed
  • 4 cups kale chopped
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon thyme dried

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until soft and translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the white beans, chopped kale, salt, pepper, and thyme.
  • Simmer for 20 minutes until the kale is tender.
  • Adjust seasoning as needed, and serve hot.
