Instructions
In a blender, combine the watermelon, cucumber, lemon juice, and honey. Blend until smooth.
Strain the blended mixture through a fine mesh sieve into a large pitcher to remove pulp and seeds.
Add cold water to the pitcher and stir well to combine the ingredients.
Serve in glasses over ice cubes, garnished with mint leaves if desired.
