Deliciously soft and fluffy vanilla muffins perfect for any occasion. These muffins are easy to make and can be enjoyed as a breakfast treat or afternoon snack.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk room temperature
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, combine the milk, melted butter, vanilla extract, and egg until well mixed.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
