Instructions
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
Add the minced garlic and continue to sauté for another minute.
Pour in the chicken broth and diced tomatoes along with their juice. Stir in the Italian seasoning.
Bring the soup to a boil, then reduce heat and let it simmer for about 10 minutes.
Add the tortellini and cook according to package instructions, or until they float to the top and are tender.
Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
Season with salt and pepper to taste before serving.
