2oz White Rum(A light, unaged rum works best for a crisp, clean flavor)
1ozFresh lime juice (Freshly squeezed is mandatory for the best acidic bite)
1/2oz Simple syrup(Can be substituted with 2 teaspoons of superfine granulated sugar)
6 to 8ozClub soda(To top off the drink with a refreshing fizz)
1cupIce(Crushed ice is traditional, but standard cubes work as well)
Instructions
Place the fresh mint leaves and the simple syrup (or sugar) into the bottom of a sturdy highball glass.
Using a wooden muddler, gently press and twist the mint leaves into the syrup for about 5 to 10 seconds. You only want to bruise the leaves to release their aromatic oils; do not shred or crush them completely, as this will release bitter chlorophyll.
Pour in the fresh lime juice and the white rum.
Fill the glass almost to the top with ice.
Top the glass off with chilled club soda.
