Instructions
In a blender or food processor, combine the Greek yogurt, strawberries, sugar, and vanilla extract. Blend until smooth.
Transfer the mixture into an ice cream maker and churn according to manufacturer’s instructions until it reaches a soft-serve consistency.
Gently fold in the crushed shortbread cookies until evenly distributed.
Serve immediately as a soft-serve treat, or transfer to an airtight container and freeze for 1-2 hours for a firmer texture.
