Ingredients
  

  • 2 cups Greek yogurt full-fat or low-fat, based on preference
  • 1 cup strawberries fresh, hulled and sliced
  • 1/4 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 cup shortbread cookies crushed

Instructions
 

  • In a blender or food processor, combine the Greek yogurt, strawberries, sugar, and vanilla extract. Blend until smooth.
  • Transfer the mixture into an ice cream maker and churn according to manufacturer’s instructions until it reaches a soft-serve consistency.
  • Gently fold in the crushed shortbread cookies until evenly distributed.
  • Serve immediately as a soft-serve treat, or transfer to an airtight container and freeze for 1-2 hours for a firmer texture.
