These delicious spinach egg bites are a perfect make-ahead breakfast or snack. Packed with protein and nutrients, they are quick to prepare and easy to enjoy on the go.

Ingredients
  

  • 4 large eggs preferably free-range
  • 1 cup fresh spinach chopped
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup milk or any non-dairy alternative
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground, to taste

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  • In a large bowl, whisk together the eggs and milk until well combined.
  • Stir in the chopped spinach, shredded cheddar cheese, salt, and black pepper.
  • Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven for 20-25 minutes, or until the egg bites are puffed and set.
  • Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.
