Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
In a large bowl, whisk together the eggs and milk until well combined.
Stir in the chopped spinach, shredded cheddar cheese, salt, and black pepper.
Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the egg bites are puffed and set.
Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.
