Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and grated ginger to the pot and cook for an additional 2 minutes.
Stir in the chicken broth and coconut milk, then bring to a simmer.
Add the shrimp to the pot and cook until they are opaque and cooked through, about 5-7 minutes.
Stir in the lime juice and red pepper flakes (if using), and season with salt and black pepper to taste.
Remove the soup from heat and garnish with chopped cilantro before serving.
