Ingredients
  

  • 4 romato tomatoes halved
  • 1 jalapeño pepper de-seeded
  • 1 medium onion quartered
  • 3 cloves garlic unpeeled
  • 1/2 cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt or to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the tomatoes, jalapeño, onion, and garlic on a baking sheet.
  • Roast in the preheated oven for about 20 minutes or until the vegetables are slightly charred.
  • Remove from the oven and let cool slightly.
  • Peel the garlic and transfer all the roasted vegetables to a blender or food processor.
  • Add the cilantro, lime juice, and salt.
  • Blend until you reach the desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve immediately or store in the refrigerator for later use.
