Instructions
In a small saucepan, heat the heavy cream and red wine over low heat until just about to simmer. Do not let it boil.
Remove from heat and stir in the chopped dark chocolate and butter. Stir until smooth and fully melted.
Pour the chocolate mixture into a shallow dish, cover, and refrigerate until firm, about 2-3 hours.
Using a spoon or a melon baller, scoop small amounts of the firm chocolate mixture and roll them into balls.
Roll each truffle in cocoa powder to coat evenly.
Store the truffles in an airtight container in the refrigerator and let them sit at room temperature before serving.
