Instructions
In a medium saucepan over medium heat, combine raspberries, sugar, and lemon juice.
Stir frequently until raspberries release their juices and the mixture starts to boil.
Reduce heat to a simmer and cook for 8-10 minutes, stirring occasionally, until the mixture has thickened.
Remove from heat and stir in vanilla extract if using. Let cool before serving or storing.
