A delightful, sweet raspberry compote that's perfect for topping pancakes, waffles, yogurt, or ice cream.

Ingredients
  

  • 2 cups raspberries fresh or frozen
  • 1/4 cup sugar adjust to taste
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon vanilla extract optional

Instructions
 

  • In a medium saucepan over medium heat, combine raspberries, sugar, and lemon juice.
  • Stir frequently until raspberries release their juices and the mixture starts to boil.
  • Reduce heat to a simmer and cook for 8-10 minutes, stirring occasionally, until the mixture has thickened.
  • Remove from heat and stir in vanilla extract if using. Let cool before serving or storing.
