A refreshing and crunchy salad that combines the flavors of radish and carrot.

Ingredients
  

  • 1 bunch radishes
  • 2 carrots
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • parsley for garnish

Instructions
 

  • Wash and trim the radishes. Slice them thinly and place in a bowl.
  • Peel the carrots and grate them using a grater. Add the grated carrots to the bowl with the radishes.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the radishes and carrots. Toss to combine.
  • Garnish with fresh parsley and serve chilled.
