Instructions
Wash and trim the radishes. Slice them thinly and place in a bowl.
Peel the carrots and grate them using a grater. Add the grated carrots to the bowl with the radishes.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the radishes and carrots. Toss to combine.
Garnish with fresh parsley and serve chilled.
