These Mexican cookies, known as polvorones, are buttery, crumbly, and perfect for any occasion. They melt in your mouth and have a delightful cinnamon-sugar coating that adds a touch of sweetness and spice.

Ingredients
  

  • 2 cups all-purpose flour sifted
  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar plus extra for dusting
  • 1 teaspoon vanilla extract pure
  • 1 tablespoon ground cinnamon for coating

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened butter and powdered sugar until light and fluffy.
  • Mix in the vanilla extract.
  • Gradually add the sifted flour, mixing until a dough forms.
  • Roll small balls of dough and place them on the prepared baking sheet, leaving some space between them.
  • Bake for 20-25 minutes or until the bottoms are light golden brown.
  • Allow the cookies to cool slightly, then roll them in a mixture of additional powdered sugar and cinnamon.
  • Let the cookies cool completely on a wire rack before serving.
