Ingredients
  

  • 1 cup basmati rice rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 cup lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Rinse the basmati rice under cold water until the water runs clear.
  • In a medium saucepan, bring the water to a boil. Add the rinsed rice, olive oil, and salt. Stir to combine.
  • Reduce the heat to low, cover the saucepan, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.
  • Once the rice is cooked, remove from heat and fluff it with a fork.
  • Stir in the lemon juice, lemon zest, and chopped parsley. Serve warm.
