In a large bowl, combine the flour, sugar, salt, and instant yeast.
Add warm water and olive oil to the dry ingredients and mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat your oven to 400°F (200°C).
Punch down the risen dough and divide it into 4 portions.
Roll each portion into a circle about 1/4-inch thick. Place on a baking sheet.
Mix the za'atar with olive oil to form a paste and spread evenly over each rolled dough.
Bake in the preheated oven for about 10-12 minutes or until golden brown.
Remove from oven and serve warm.
