Spicy and tangy Jalapeno-Lime Corn on the Cob is a perfect side dish for any summer BBQ or gathering. The combination of fresh lime juice and jalapeno peppers gives a zesty twist to the classic corn on the cob.

Ingredients
  

  • 2 ears corn on the cob husked and cleaned
  • 1 tbsp olive oil
  • 1 jalapeno pepper finely chopped
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp lime zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Preheat your grill to medium-high heat.
  • Brush the corn with olive oil to coat all sides evenly.
  • Place the corn on the grill. Grill for about 10-15 minutes, rotating every few minutes, until the corn is tender and slightly charred.
  • In a small bowl, mix together jalapeno, lime juice, lime zest, salt, and black pepper.
  • Once the corn is cooked, remove from the grill and drizzle the jalapeno-lime mixture over the corn.
  • Serve immediately and enjoy.
