A hearty and comforting traditional Irish potato soup made with simple ingredients like potatoes, onions, and leeks, perfect for a cozy meal.

Ingredients
  

  • 4 cups potatoes peeled and diced
  • 1 cup leeks sliced
  • 1 cup onions diced
  • 4 cups chicken broth low sodium
  • 1 cup milk whole
  • 2 tablespoons butter
  • to taste salt
  • to taste black pepper

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the onions and leeks, and sauté until softened, about 5 minutes.
  • Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
  • Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches and blend until smooth.
  • Return the soup to the pot if necessary, stir in the milk, and heat through. Season with salt and pepper to taste.
  • Serve hot, garnished with chives or parsley if desired.
