Instructions
In a large pot, melt the butter over medium heat. Add the onions and leeks, and sauté until softened, about 5 minutes.
Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches and blend until smooth.
Return the soup to the pot if necessary, stir in the milk, and heat through. Season with salt and pepper to taste.
Serve hot, garnished with chives or parsley if desired.
