Ingredients
  

  • 2 stalks rhubarb cut into 1-inch pieces
  • 2 tablespoons honey use more if you prefer it sweeter
  • 1 slice bread preferably sourdough or whole grain
  • 1 tablespoon butter softened, for spreading

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • Place the rhubarb pieces on a baking sheet and drizzle with honey. Toss to coat evenly.
  • Roast in the oven for 15-20 minutes, or until rhubarb is tender and slightly caramelized.
  • While the rhubarb is roasting, toast the slice of bread to your desired level of crispness.
  • Spread butter over the warm toast, then top with the roasted rhubarb.
  • Serve immediately, drizzled with any remaining roasting juices.
