honey
use more if you prefer it sweeter

preferably sourdough or whole grain

butter
softened, for spreading
Instructions
Preheat your oven to 200°C (400°F).
Place the rhubarb pieces on a baking sheet and drizzle with honey. Toss to coat evenly.
Roast in the oven for 15-20 minutes, or until rhubarb is tender and slightly caramelized.
While the rhubarb is roasting, toast the slice of bread to your desired level of crispness.
Spread butter over the warm toast, then top with the roasted rhubarb.
Serve immediately, drizzled with any remaining roasting juices.
