Ingredients
  

  • 1 piece Chicken breast boneless and skinless
  • 1 cup Black beans cooked or canned, drained and rinsed
  • 1 cup Brown rice cooked
  • 0.5 cup Salsa your choice of spice level
  • 1 piece Whole grain tortilla large
  • 0.25 cup Cheddar cheese shredded
  • 1 piece Avocado sliced
  • 0.25 cup Lettuce shredded

Instructions
 

  • Heat a skillet over medium-high heat and cook the chicken breast for about 7-10 minutes on each side until thoroughly cooked. Let it rest and then slice.
  • Lay the tortilla on a flat surface and evenly spread the brown rice over the center.
  • Add the black beans, cooked chicken slices, salsa, shredded lettuce, sliced avocado, and cheese on top of the rice.
  • Fold the sides of the tortilla over the fillings, roll it tightly from one end to the other to form a burrito.
  • Serve immediately or wrap in foil to keep warm.
