These delicious hash brown cups are perfect for breakfast or brunch. They are crispy on the outside and soft on the inside, making them a crowd favorite!

Ingredients
  

  • 2 cups frozen hash browns thawed
  • 1 cup cheddar cheese shredded
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 pieces eggs optional: if you want to add an egg on top

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
  • In a large bowl, mix together the thawed hash browns, cheddar cheese, olive oil, salt, and pepper until well combined.
  • Spoon the mixture into the prepared muffin tin, pressing down to cover the bottom and sides of each cup.
  • Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and crispy.
  • If desired, crack an egg into each cup and bake for an additional 10 minutes, or until the eggs are cooked to your liking.
  • Remove from the oven and let cool slightly before serving. Enjoy your hash brown cups warm!
