  • 1 medium eggplant cut into 1/2-inch slices

  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice for serving

Instructions
 

  • Preheat a grill or grill pan over medium-high heat.
  • In a small bowl, whisk together the olive oil, minced garlic, oregano, salt, and black pepper.
  • Brush both sides of the eggplant slices with the seasoned oil.
  • Grill the eggplant for 5 to 6 minutes per side, until tender and marked with grill lines.
