A quick and refreshing salad featuring cucumbers with a tangy Asian-inspired dressing.

Ingredients
  

  • 2 cups cucumbers sliced thinly
  • 2 tablespoons rice vinegar unseasoned
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar optional
  • 1 tablespoon sesame seeds toasted
  • 1 clove garlic minced
  • 1 pinch red pepper flakes optional, to taste

Instructions
 

  • In a large bowl, combine rice vinegar, soy sauce, sesame oil, sugar, and minced garlic.
  • Add the sliced cucumbers to the bowl and toss to coat them well with the dressing.
  • Sprinkle with toasted sesame seeds and red pepper flakes, if using.
  • Serve immediately or chill in the refrigerator for 10 minutes for enhanced flavor.
