Ingredients
  

  • 1 cup chickpeas canned, drained and rinsed
  • 1 cup black beans canned, drained and rinsed
  • 1 cup kidney beans canned, drained and rinsed
  • 1 cup corn kernels fresh or canned
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin ground
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

  • In a large bowl, combine the chickpeas, black beans, kidney beans, corn, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper.
  • Pour the dressing over the bean mixture and toss to coat thoroughly.
  • Cover and refrigerate for at least 30 minutes to let the flavors meld together.
  • Serve chilled or at room temperature.
