Ingredients
  

  • 2 tablespoons butter unsalted
  • 1 cup onion chopped
  • 2 cups corn kernels fresh or frozen
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream or milk
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Instructions
 

  • Heat butter in a large pot over medium heat until melted.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in corn kernels and cook for another 3 minutes.
  • Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  • Stir in heavy cream, salt, and pepper. Cook for an additional 5 minutes.
  • Use an immersion blender to puree the chowder to desired consistency.
  • Adjust seasoning with salt and pepper to taste. Serve hot.
