Instructions
Heat butter in a large pot over medium heat until melted.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in corn kernels and cook for another 3 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in heavy cream, salt, and pepper. Cook for an additional 5 minutes.
Use an immersion blender to puree the chowder to desired consistency.
Adjust seasoning with salt and pepper to taste. Serve hot.
