Ingredients
  

  • 1 pound chicken breast cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3/4 cup pesto store-bought or homemade
  • 1 cup heavy cream
  • 12 ounces pasta such as penne or fettuccine
  • 1/2 cup grated Parmesan cheese plus extra for serving
  • to taste salt
  • to taste black pepper

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes.
  • Reduce heat to low, stir in the pesto and heavy cream, and let it simmer for 2 minutes.
  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Stir in the Parmesan cheese, and season with salt and black pepper to taste.
  • Serve immediately, garnished with extra Parmesan cheese if desired.
