Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat, as preferred
  • 2 cups all-purpose flour sifted
  • 1/2 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/2 cup butter cold and diced
  • 1 teaspoon salt
  • 1/4 cup milk

Instructions
 

  • Preheat your oven to 450°F (230°C).
  • In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the cottage cheese and milk until the dough just comes together.
  • Turn the dough out onto a lightly floured surface and knead gently just until it holds together.
  • Roll out the dough to about 1/2 inch thickness and cut with a biscuit cutter.
  • Place the biscuits on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
