A refreshing summer drink combining the tropical flavor of coconut with the coolness of mint and the tang of lemonade.

Ingredients
  

  • 1 cup coconut water chilled
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon honey or to taste
  • 5-6 leaves mint fresh
  • 1 slice lime for garnish
  • 1/2 cup ice cubes optional

Instructions
 

  • In a glass, combine the coconut water, lemon juice, and honey. Stir well until the honey is fully dissolved.
  • Add the mint leaves to the glass and gently muddle them with a spoon to release their flavor.
  • Add the ice cubes into the glass, if using, and stir again to mix everything together.
  • Garnish with a slice of lime and additional mint leaves, if desired, and serve chilled.
